A coarse solid block of crystallized, refined sugar, rock sugar is used to sweeten tea, drinks and desserts; and adds a sweet edge to savoury dishes. It is also considered to have therapeutic qualities – rock sugar with lemon/lime/kumquat is a traditional Vietnamese ‘cough syrup’.
